Description

A comforting dish combining tender chicken and soft noodles in a savory broth, perfect for chilly days.


Ingredients

Scale
  • 4 boneless chicken breasts or thighs
  • 8 oz egg noodles
  • 4 cups chicken broth
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • 1 tsp dried thyme
  • 1 bay leaf


Instructions

  1. Place the chicken in the bottom of the crockpot.
  2. Add the chopped carrots, celery, and onion over the chicken.
  3. Pour in the chicken broth, covering the chicken and veggies entirely.
  4. Season with salt, pepper, thyme, and lay a bay leaf on top. Stir gently.
  5. Set the crockpot to low and cook for 6-8 hours, until the chicken is tender.
  6. Remove the chicken, shred it with two forks, and return it to the crockpot.
  7. Stir in the egg noodles and cook on high for 20-30 minutes, until the noodles are soft.
  8. Adjust seasoning if needed and serve warm.

Notes

For added flavor, consider a quick sear on the chicken before adding to the crockpot. This dish can be made ahead of time and stored in the fridge for quick meals.
