- 4 boneless chicken breasts or thighs
- 8 oz egg noodles
- 4 cups chicken broth
- 2 cups chopped carrots
- 2 cups chopped celery
- 1 onion, chopped
- 3 cloves garlic, minced
- Salt to taste
- Pepper to taste
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Place the chicken in the bottom of the crockpot.
- Add the chopped carrots, celery, and onion over the chicken.
- Pour in the chicken broth, covering the chicken and veggies entirely.
- Season with salt, pepper, thyme, and lay a bay leaf on top. Stir gently.
- Set the crockpot to low and cook for 6-8 hours, until the chicken is tender.
- Remove the chicken, shred it with two forks, and return it to the crockpot.
- Stir in the egg noodles and cook on high for 20-30 minutes, until the noodles are soft.
- Adjust seasoning if needed and serve warm.
Notes
For added flavor, consider a quick sear on the chicken before adding to the crockpot. This dish can be made ahead of time and stored in the fridge for quick meals.
