Description

Deliciously crispy roasted carrots coated in Parmesan cheese, perfect as a side dish.


Ingredients

  • 1 lb carrots (regular or baby)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (optional, such as thyme or parsley)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. If using regular carrots, peel and cut into even-sized sticks; baby carrots can be left whole.
  3. Toss the carrots in a large bowl with olive oil, garlic powder, salt, and pepper until evenly coated.
  4. Sprinkle the grated Parmesan cheese over the carrots.
  5. Spread the carrots in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and golden.
  6. If using fresh herbs, sprinkle on top after roasting.

Notes

Cut carrots uniformly for even roasting. Avoid overcrowding the baking sheet for maximum crispiness.
