- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- Fresh herbs (optional, such as thyme or parsley)
Instructions
- Preheat the oven to 425°F (220°C).
- If using regular carrots, peel and cut into even-sized sticks; baby carrots can be left whole.
- Toss the carrots in a large bowl with olive oil, garlic powder, salt, and pepper until evenly coated.
- Sprinkle the grated Parmesan cheese over the carrots.
- Spread the carrots in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and golden.
- If using fresh herbs, sprinkle on top after roasting.
Notes
Cut carrots uniformly for even roasting. Avoid overcrowding the baking sheet for maximum crispiness.
