Description

An exciting twist on regular chicken featuring a crunchy coating with the delightful tang of dill pickles and Parmesan cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickles, finely chopped
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. If chicken breasts are thick, slice them in half for even cooking.
  3. In a bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. Finely chop dill pickles and place in a separate bowl, keeping some aside for garnishing.
  5. Dip each chicken breast into the chopped dill pickles, then press into the breadcrumb mixture until evenly coated.
  6. Place the coated chicken on the prepared baking sheet and drizzle with olive oil.
  7. Bake for 25-30 minutes or until golden and cooked through; a meat thermometer should read 165°F (75°C).
  8. Let the chicken rest for a few minutes before serving.

Notes

For the best crunch, use panko breadcrumbs. Fresh ingredients make a significant difference in flavor.
