- 4 boneless, skinless chicken breasts
- 1 cup dill pickles, finely chopped
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- If chicken breasts are thick, slice them in half for even cooking.
- In a bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
- Finely chop dill pickles and place in a separate bowl, keeping some aside for garnishing.
- Dip each chicken breast into the chopped dill pickles, then press into the breadcrumb mixture until evenly coated.
- Place the coated chicken on the prepared baking sheet and drizzle with olive oil.
- Bake for 25-30 minutes or until golden and cooked through; a meat thermometer should read 165°F (75°C).
- Let the chicken rest for a few minutes before serving.
Notes
For the best crunch, use panko breadcrumbs. Fresh ingredients make a significant difference in flavor.
