Description

A delightful Mexican-American dish of flour tortillas filled with seasoned ground beef and cheese, deep-fried until golden brown.


Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt to taste
  • Vegetable or canola oil for frying


Instructions

  1. In a skillet over medium heat, brown the ground beef and drain excess fat. Add diced onions and garlic, cooking until softened.
  2. Stir in chili powder, cumin, and salt, cooking until fragrant, about 2-3 minutes.
  3. Remove the skillet from heat and fold in half of the shredded cheese until melted and combined.
  4. Lay a tortilla flat, spoon some beef mixture into the center, and sprinkle with extra cheese. Fold in the sides and roll up tightly. Repeat until all filling is used.
  5. Heat about 2 inches of oil in a heavy pot over medium-high heat. Fry the chimichangas in batches, turning until golden brown on all sides. Drain on paper towels.
  6. Serve hot with salsa, guacamole, or sour cream. Enjoy!

Notes

Don’t overfill the chimichangas to prevent bursting during frying. For a healthier option, you can bake them instead of frying.
