- 1 lb boneless, skinless chicken breast
- 1 cup mozzarella cheese (shredded or fresh)
- 4 flour tortillas
- 1 egg (or flax egg for vegan option)
- 1 cup panko breadcrumbs
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- Olive oil spray
Instructions
- Cut the chicken breast into small, bite-sized pieces for even cooking.
- Toss the chicken pieces with salt, pepper, garlic powder, and Italian seasoning.
- Dip each piece of chicken in the beaten egg, then roll in panko breadcrumbs until coated.
- Preheat your air fryer to 400°F (200°C). Place chicken in the fryer basket in a single layer and spritz with olive oil. Cook for 8-10 minutes, shaking basket halfway.
- Once chicken is cooked, place a few pieces in a tortilla, add mozzarella, and roll tightly.
- Place wraps seam-side down in the air fryer and cook for 4-5 minutes until tortillas are golden and cheese is melted.
- Slice wraps in half and serve immediately with dipping sauces or as is.
