Description

A delightful fusion of classic crème brûlée and cheesecake, featuring a buttery graham cracker crust and a crispy caramelized sugar topping.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • ⅓ cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • ½ cup brown sugar


Instructions

  1. Preheat your oven to 325°F (about 160°C). In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press into the bottom of a greased 9×9 inch baking dish and bake for 10 minutes.
  2. Beat cream cheese until smooth. Add granulated sugar, eggs, heavy cream, and vanilla extract. Mix until creamy with no lumps.
  3. Pour the cheesecake mixture over the crust evenly. Bake for 30-35 minutes until the edges are set and the center has a slight jiggle.
  4. Cool completely, then chill in the refrigerator for at least 3 hours. Once chilled, sprinkle brown sugar on top.
  5. Using a kitchen torch, melt the brown sugar until it forms a hard caramelized layer. Alternatively, broil in the oven for a couple of minutes.
  6. Once the sugar hardens, refrigerate for at least 30 minutes before slicing.
  7. Slice into squares and serve with optional toppings like fresh berries or whipped cream.
