- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, room temperature
- ⅓ cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 1 tsp vanilla extract
- ½ cup brown sugar
Instructions
- Preheat your oven to 325°F (about 160°C). In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press into the bottom of a greased 9×9 inch baking dish and bake for 10 minutes.
- Beat cream cheese until smooth. Add granulated sugar, eggs, heavy cream, and vanilla extract. Mix until creamy with no lumps.
- Pour the cheesecake mixture over the crust evenly. Bake for 30-35 minutes until the edges are set and the center has a slight jiggle.
- Cool completely, then chill in the refrigerator for at least 3 hours. Once chilled, sprinkle brown sugar on top.
- Using a kitchen torch, melt the brown sugar until it forms a hard caramelized layer. Alternatively, broil in the oven for a couple of minutes.
- Once the sugar hardens, refrigerate for at least 30 minutes before slicing.
- Slice into squares and serve with optional toppings like fresh berries or whipped cream.

Keep the dessert chilled for the best texture. Ensure ingredients are at room temperature for a lump-free batter.
