Description

A comforting bowl of creamy white chicken chili with tender chicken, creamy beans, and a delightful mixture of spices.


Ingredients

  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 2 cans cannellini beans, drained and rinsed
  • 1 can green chilies
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 4 cups chicken broth
  • 8 oz cream cheese
  • 1 cup corn (fresh or frozen)
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sautéing until soft.
  2. Add the diced chicken and cook until browned.
  3. Stir in the cannellini beans and green chilies.
  4. Pour in the chicken broth and bring to a simmer.
  5. Sprinkle in cumin, salt, and pepper, stirring to combine.
  6. Add cream cheese and stir until melted and creamy.
  7. Stir in corn and cook for an additional few minutes. Season to taste.
  8. Serve hot, garnished with cilantro.
