Description

A cozy one-pot meal featuring tender shrimp, creamy orzo, and vibrant broccoli, perfect for a quick dinner or a fancy treat.


Ingredients

  • 1 cup Orzo Pasta
  • 1 pound large Shrimp, peeled and deveined
  • 2 cups Broccoli, fresh or frozen
  • 1 cup Heavy Cream
  • 3 cloves Garlic, minced
  • 1 small Onion, diced
  • 1/2 cup Parmesan Cheese, grated
  • 3 cups Chicken or Vegetable Broth
  • 2 tablespoons Olive Oil


Instructions

  1. In a large pot, bring water to a boil, blanch the broccoli for 2-3 minutes, then remove and set aside.
  2. In the same pot, heat olive oil over medium heat. Sauté minced garlic and diced onion until fragrant and golden.
  3. Toss in the orzo and stir for a minute to toast it lightly.
  4. Add the broth ensuring it covers the orzo completely. Bring to a simmer and let it cook, stirring occasionally.
  5. Once the orzo is nearly cooked, stir in the shrimp. Cook until they turn pink and are fully cooked through.
  6. Lower the heat, drizzle in the cream, and mix until everything is well combined.
  7. Gently fold in the blanched broccoli and let it warm through.
  8. Sprinkle with grated Parmesan cheese and season with salt and pepper to taste.

Notes

Cook the orzo just until al dente; it will continue to cook slightly after adding the cream. Don’t overload the pot with shrimp; give them enough space to cook evenly.
