- 1 lb Boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp Olive oil
- 3 cloves Fresh minced garlic
- 1 Onion, chopped
- 1/2 cup Sun-dried tomatoes, packed in oil
- 2 cups Fresh spinach
- 4 cups Low-sodium chicken broth
- 1 cup Heavy cream
- 2 tsp Italian seasoning
- 1/2 cup Grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add the chicken pieces and cook until they’re no longer pink, seasoning with salt and pepper.
- Toss in the chopped onion and garlic, sautéing until the onions are translucent.
- Stir in the sun-dried tomatoes and let them mingle for a minute.
- Add the chicken broth and bring to a light simmer.
- Add the fresh spinach and let it wilt.
- Slowly stir in the heavy cream while lowering the heat until the soup becomes smooth.
- Sprinkle in the Italian seasoning and adjust salt and pepper if needed.
- Ladle the soup into bowls and top with grated Parmesan cheese.
Notes
This soup keeps well in the fridge for three days and can be frozen, just add the cream when reheating.
