Description

Ingredients

  • 1 lb Boneless, skinless chicken breast
  • 8 oz Cream cheese
  • 4 cups Chicken broth
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 1 tsp Dried thyme
  • 1/4 cup Fresh parsley, chopped
  • 2 cups Fresh spinach
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for sautéing


Instructions

  1. In a large pot, heat some olive oil over medium heat. Toss in diced onion, minced garlic, chopped carrots, and celery. Cook until softened, around 5 minutes.
  2. Add chicken breast pieces to the pot and season with salt, pepper, and thyme. Cook until the chicken is browned on the outside.
  3. Pour in chicken broth and let it simmer for about 20 minutes, or until the chicken is fully cooked.
  4. Remove the chicken, shred it, and stir in the cream cheese until melted and smooth. Return the chicken to the pot.
  5. Add fresh spinach and parsley, cooking for just a few more minutes until the spinach wilts. Adjust seasoning if necessary.
