- 1 lb Boneless, skinless chicken breast
- 8 oz Cream cheese
- 4 cups Chicken broth
- 2 Carrots, chopped
- 2 Celery stalks, chopped
- 1 Onion, diced
- 3 cloves Garlic, minced
- 1 tsp Dried thyme
- 1/4 cup Fresh parsley, chopped
- 2 cups Fresh spinach
- Salt, to taste
- Pepper, to taste
- Olive oil, for sautéing
Instructions
- In a large pot, heat some olive oil over medium heat. Toss in diced onion, minced garlic, chopped carrots, and celery. Cook until softened, around 5 minutes.
- Add chicken breast pieces to the pot and season with salt, pepper, and thyme. Cook until the chicken is browned on the outside.
- Pour in chicken broth and let it simmer for about 20 minutes, or until the chicken is fully cooked.
- Remove the chicken, shred it, and stir in the cream cheese until melted and smooth. Return the chicken to the pot.
- Add fresh spinach and parsley, cooking for just a few more minutes until the spinach wilts. Adjust seasoning if necessary.
