- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- ⅓ cup fresh lemon juice
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until moistened. Press into the bottom of a lined baking pan and bake for 10 minutes until golden.
- In another bowl, beat cream cheese until smooth. Gradually add sugar, then lemon juice, eggs, and vanilla extract, mixing until creamy.
- Pour the filling over the baked crust, smoothing the top. Bake for 25-30 minutes until the filling is set but still slightly jiggly in the center.
- Let it cool completely, then sprinkle reserved crumb mixture on top for garnish.
- Cut into squares, serve chilled, and enjoy!
