Description

Delightful bars with a buttery crumb crust and smooth, creamy lemon cheesecake filling, topped with crumbs for added texture.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • ⅓ cup fresh lemon juice
  • 2 large eggs
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until moistened. Press into the bottom of a lined baking pan and bake for 10 minutes until golden.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar, then lemon juice, eggs, and vanilla extract, mixing until creamy.
  4. Pour the filling over the baked crust, smoothing the top. Bake for 25-30 minutes until the filling is set but still slightly jiggly in the center.
  5. Let it cool completely, then sprinkle reserved crumb mixture on top for garnish.
  6. Cut into squares, serve chilled, and enjoy!
