Description

A comforting dish of potato gnocchi in a creamy sauce with spinach and salty feta cheese, perfect for weeknight dinners or impressing guests.


Ingredients

  • 1 package gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil and add the gnocchi. Cook until they float, about 2-3 minutes, then remove them with a slotted spoon and set aside.
  2. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add fresh spinach and cook until wilted, around 2-3 minutes.
  4. Pour in the heavy cream, stirring to combine, and let it simmer until thickened, about 3-4 minutes.
  5. Add crumbled feta cheese and stir until melted into the sauce.
  6. Gently fold in the cooked gnocchi, coating them in the creamy sauce. Season with salt and pepper to taste.
  7. Serve immediately in bowls, optionally garnished with extra feta.

Notes

For a lighter option, substitute heavy cream with half-and-half or a plant-based cream. Leftovers can be stored in an airtight container for up to 3 days.
