- 1 package gnocchi
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil and add the gnocchi. Cook until they float, about 2-3 minutes, then remove them with a slotted spoon and set aside.
- In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add fresh spinach and cook until wilted, around 2-3 minutes.
- Pour in the heavy cream, stirring to combine, and let it simmer until thickened, about 3-4 minutes.
- Add crumbled feta cheese and stir until melted into the sauce.
- Gently fold in the cooked gnocchi, coating them in the creamy sauce. Season with salt and pepper to taste.
- Serve immediately in bowls, optionally garnished with extra feta.
Notes
For a lighter option, substitute heavy cream with half-and-half or a plant-based cream. Leftovers can be stored in an airtight container for up to 3 days.
