- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- Salt to taste

Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant—about 3 to 5 minutes.
- Sprinkle the flour into the pot and stir for a minute to remove the raw flour taste.
- Gradually whisk in the vegetable broth, ensuring there are no lumps. Bring to a gentle simmer.
- Lower the heat slightly, then pour in the heavy cream while stirring, bringing it back to a simmer.
- Stir in the grated parmesan until melted and incorporated. Season with salt and pepper to taste.
- Ladle the soup into bowls, optionally garnishing with additional parmesan or a sprinkle of freshly cracked pepper.
Notes
For a lighter version, substitute heavy cream with half-and-half. You can also make it a meal by adding cooked chicken or sautéed mushrooms.
