Description

A comforting and rich creamy garlic parmesan soup that’s perfect for cozy dinners or fancy gatherings.


Ingredients

  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1/4 cup flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • Salt to taste
  • Pepper to taste


Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant—about 3 to 5 minutes.
  2. Sprinkle the flour into the pot and stir for a minute to remove the raw flour taste.
  3. Gradually whisk in the vegetable broth, ensuring there are no lumps. Bring to a gentle simmer.
  4. Lower the heat slightly, then pour in the heavy cream while stirring, bringing it back to a simmer.
  5. Stir in the grated parmesan until melted and incorporated. Season with salt and pepper to taste.
  6. Ladle the soup into bowls, optionally garnishing with additional parmesan or a sprinkle of freshly cracked pepper.

Notes

For a lighter version, substitute heavy cream with half-and-half. You can also make it a meal by adding cooked chicken or sautéed mushrooms.
