- 1 can (13.5 oz) coconut milk
- 1 bell pepper, chopped
- 2 carrots, chopped
- 2 cups spinach
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 tbsp fish sauce (or soy sauce)
- Juice of 1 lime
- Fresh herbs (cilantro or basil) for garnish
Instructions
- In a large pot, heat a little oil over medium heat. Toss in diced garlic and ginger. Stir until fragrant, about 1 minute.
- Add chopped vegetables and cook for 5-7 minutes until tender.
- Pour in the coconut milk and stir well. Let it come to a gentle simmer.
- Carefully add white fish pieces and cook for 10 minutes until they flake easily.
- Stir in fish sauce and lime juice to elevate the flavor.
- Fold in fresh herbs and serve hot. Optional: serve with rice or crusty bread.
