Description

A warm and comforting stew featuring flaky white fish in a rich coconut milk broth, paired with vibrant vegetables and a hint of lime.

Ingredients

Scale
  • 1 lb white fish (like cod or halibut)
  • 1 can (13.5 oz) coconut milk
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 2 cups spinach
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tbsp fish sauce (or soy sauce)
  • Juice of 1 lime
  • Fresh herbs (cilantro or basil) for garnish

Instructions

  1. In a large pot, heat a little oil over medium heat. Toss in diced garlic and ginger. Stir until fragrant, about 1 minute.
  2. Add chopped vegetables and cook for 5-7 minutes until tender.
  3. Pour in the coconut milk and stir well. Let it come to a gentle simmer.
  4. Carefully add white fish pieces and cook for 10 minutes until they flake easily.
  5. Stir in fish sauce and lime juice to elevate the flavor.
  6. Fold in fresh herbs and serve hot. Optional: serve with rice or crusty bread.

Notes

Use fresh, quality white fish for the best flavor. Adjust the coconut milk for desired creaminess.
