- Boneless, skinless chicken breast (or thighs)
- Long-grain white rice or jasmine rice (or brown rice)
- Cajun seasoning
- Heavy cream (or half-and-half or coconut milk)
- 1 medium onion, diced
- Bell pepper (any color), diced
- Fresh minced garlic
- Low-sodium chicken broth
- Green onions, for garnish
Instructions
- Heat oil in a skillet over medium-high heat. Cook cubed chicken seasoned with Cajun seasoning until browned, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, sauté diced onion and bell pepper until soft. Add minced garlic and cook for another minute.
- Add chicken back to the skillet, stir in rice, chicken broth, and more Cajun seasoning. Bring to a gentle boil, cover, and simmer for about 15 minutes or until rice absorbs all the liquid.
- Stir in heavy cream and adjust seasoning to taste.
- Serve in bowls, garnished with chopped green onions.
Notes
Be generous with the Cajun seasoning for a bolder flavor. This dish can be made ahead of time and is freezer-friendly.
