Description

A delightful one-pot dish featuring tender chicken and fluffy rice soaked in a creamy Cajun sauce.


Ingredients

  • Boneless, skinless chicken breast (or thighs)
  • Long-grain white rice or jasmine rice (or brown rice)
  • Cajun seasoning
  • Heavy cream (or half-and-half or coconut milk)
  • 1 medium onion, diced
  • Bell pepper (any color), diced
  • Fresh minced garlic
  • Low-sodium chicken broth
  • Green onions, for garnish


Instructions

  1. Heat oil in a skillet over medium-high heat. Cook cubed chicken seasoned with Cajun seasoning until browned, about 5-7 minutes. Remove from skillet and set aside.
  2. In the same skillet, sauté diced onion and bell pepper until soft. Add minced garlic and cook for another minute.
  3. Add chicken back to the skillet, stir in rice, chicken broth, and more Cajun seasoning. Bring to a gentle boil, cover, and simmer for about 15 minutes or until rice absorbs all the liquid.
  4. Stir in heavy cream and adjust seasoning to taste.
  5. Serve in bowls, garnished with chopped green onions.

Notes

Be generous with the Cajun seasoning for a bolder flavor. This dish can be made ahead of time and is freezer-friendly.
