- 4 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 4 ounces cream cheese
- 1 cup diced bell peppers (any color)
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup long-grain white or brown rice
- 1/2 cup grated Parmesan cheese (optional)
- Olive oil for cooking
Instructions
- Season the chicken breasts with Cajun seasoning, coating all sides.
- In a large skillet, heat olive oil over medium heat and sauté the seasoned chicken for 6-7 minutes on each side until golden brown. Set aside.
- In the same skillet, add more oil if needed and sauté diced onions and bell peppers for about 5 minutes until tender.
- Add minced garlic and cook for an additional minute until fragrant.
- Reduce heat and stir in cream cheese and chicken broth until creamy and well combined.
- Add uncooked rice, cover, and let simmer for about 20 minutes, or until rice is fluffy and cooked.
- Slice cooked chicken into strips and place over creamy rice. Sprinkle with Parmesan if desired.
Notes
Feel free to substitute proteins or add more vegetables like zucchini or spinach. Adjust Cajun seasoning to taste.
