Description

A delightful quick bread featuring tart cranberries and crunchy walnuts, perfect for breakfast, brunch, or as a snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1 cup milk (or plant-based milk)
  • 1 egg (or flax/chia egg for vegan option)
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix milk, egg, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in dried cranberries and chopped walnuts until evenly distributed.
  6. Transfer the batter to the greased loaf pan, smoothing the top.
  7. Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Slice and serve.

Notes

Store wrapped tightly to keep fresh for up to a week at room temperature. For an extra treat, try it toasted with butter or cream cheese.
