Description

A delightful cheese spread rolled into a log shape, covered with crunchy pistachios and sweet-tart cranberries. Perfect for holiday gatherings!


Ingredients

  • 8 oz Cream Cheese, softened
  • 4 oz Goat Cheese, softened (or feta)
  • 1/4 cup Dried Cranberries, chopped
  • 1/2 cup Pistachios, chopped
  • 2 tbsp Honey (or maple syrup)
  • 2 tbsp Fresh Herbs (like rosemary or thyme)


Instructions

  1. Let the cream cheese and goat cheese sit at room temperature for about 30 minutes until soft and creamy.
  2. In a mixing bowl, blend the cream cheese, goat cheese, honey, and chopped herbs until smooth.
  3. Lay out plastic wrap and spoon the cheese mixture onto it. Shape it into a log, then roll it tightly.
  4. Place the log in the refrigerator for at least 120 minutes to firm up.
  5. Once set, unwrap the log and roll it in the chopped cranberries and pistachios, pressing lightly to adhere.
  6. Place it on a serving platter and pair with your favorite crackers!

Notes
