- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup melted butter
- 1 cup fresh or frozen cranberries
- 1 tbsp orange zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs and mix in buttermilk and melted butter. Add the orange zest and stir.
- Gradually add the wet mixture into the dry ingredients, mixing gently until just combined.
- Fold in the cranberries until evenly incorporated.
- Pour the mixture into a greased loaf pan, smoothing the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For added flavor, try serving with cream cheese or a drizzle of honey. Store leftovers in an airtight container for up to 3 days at room temperature.
