Description

A sweet and moist loaf packed with fresh cranberries and bright orange zest, perfect for breakfast or as an afternoon treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 1 cup fresh or frozen cranberries
  • 1 tbsp orange zest


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and mix in buttermilk and melted butter. Add the orange zest and stir.
  4. Gradually add the wet mixture into the dry ingredients, mixing gently until just combined.
  5. Fold in the cranberries until evenly incorporated.
  6. Pour the mixture into a greased loaf pan, smoothing the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, try serving with cream cheese or a drizzle of honey. Store leftovers in an airtight container for up to 3 days at room temperature.
