- 4 medium sweet potatoes
- 1 cup fresh or dried cranberries
- 1 firm apple (Granny Smith or Honeycrisp)
- 2 tablespoons unsalted butter
- 2 tablespoons maple syrup
- 1/2 cup Greek yogurt or cream cheese
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean, poke holes in them with a fork, and bake directly on the oven rack for about 45-60 minutes, until soft.
- While the sweet potatoes are baking, chop your apple into small pieces and toss it in a bowl with the cranberries, butter, maple syrup, and cinnamon.
- Once baked, let the sweet potatoes cool a bit. Cut them in half lengthwise, and scoop out most of the flesh into a separate bowl.
- Combine the sweet potato flesh with the apple mixture and Greek yogurt or cream cheese until smooth.
- Spoon the filling back into the sweet potato skins, then put them back in the oven for an additional 15-20 minutes, until heated through and slightly golden.
- Garnish with extra cranberries or apple slices if you like, and serve.
Notes
For a crunch, consider adding nuts like walnuts or pecans. Adjust the sweetness to your taste by varying the amount of maple syrup.
