Description

A delightful combination of sweet potatoes, tart cranberries, and crisp apples, baked twice for a cozy, flavorful dish that’s perfect for any occasion.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 1 cup fresh or dried cranberries
  • 1 firm apple (Granny Smith or Honeycrisp)
  • 2 tablespoons unsalted butter
  • 2 tablespoons maple syrup
  • 1/2 cup Greek yogurt or cream cheese
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean, poke holes in them with a fork, and bake directly on the oven rack for about 45-60 minutes, until soft.
  2. While the sweet potatoes are baking, chop your apple into small pieces and toss it in a bowl with the cranberries, butter, maple syrup, and cinnamon.
  3. Once baked, let the sweet potatoes cool a bit. Cut them in half lengthwise, and scoop out most of the flesh into a separate bowl.
  4. Combine the sweet potato flesh with the apple mixture and Greek yogurt or cream cheese until smooth.
  5. Spoon the filling back into the sweet potato skins, then put them back in the oven for an additional 15-20 minutes, until heated through and slightly golden.
  6. Garnish with extra cranberries or apple slices if you like, and serve.

Notes

For a crunch, consider adding nuts like walnuts or pecans. Adjust the sweetness to your taste by varying the amount of maple syrup.
