Description

A warm bowl of Cozy Slow Cooker Lasagna Soup, a hearty transformation of classic lasagna into a delicious soup, perfect for chilly evenings.


Ingredients

  • 1 lb ground beef (or ground turkey or sautéed mushrooms for a vegetarian option)
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 15 oz can tomato sauce
  • 2 tsp Italian seasoning
  • 4 cups beef broth (or chicken broth)
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese


Instructions

  1. In a skillet over medium heat, cook the ground beef with the diced onion until browned. Add minced garlic and sauté for one more minute.
  2. Add the browned meat mixture to your slow cooker.
  3. Pour in crushed tomatoes and tomato sauce. Stir to combine.
  4. Add beef broth, Italian seasoning, salt, and pepper. Give it a good stir.
  5. Break the lasagna noodles into smaller pieces and toss them in.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. About 30 minutes before serving, stir in ricotta cheese.
  8. Ladle the soup into bowls, topping each with shredded mozzarella. Let it melt before serving.

Notes

For extra flavor, brown the meat before adding it to the cooker. You can stir in spinach or kale right before serving for added nutrition.
