- 3 ripe bananas
- 1/4 cup nut butter (peanut, almond, or sunflower seed)
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 2 eggs or flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
- 1 1/2 cups whole wheat flour
- 1/4 cup vanilla protein powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the bananas in a large mixing bowl until smooth and creamy.
- Stir in nut butter, honey (or maple syrup), and applesauce until well combined.
- Add eggs (or flax eggs) and mix gently.
- In another bowl, whisk together flour, protein powder, baking soda, cinnamon, and salt.
- Gradually integrate the dry ingredients into the wet mixture, stirring just until combined.
- Fold in chopped nuts or chocolate chips if using.
- Pour batter into a greased loaf pan and smooth the top.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool before slicing and enjoy!
Notes
Experiment with different nut butters and add spices like nutmeg for more flavor. Works great as muffins with adjusted baking time.
