Cowboy Scampi is a delightful twist on traditional shrimp scampi, blending fresh ingredients and bold flavors for a comforting and mouthwatering meal.

- 1 lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 4 tbsp unsalted butter
- 1/2 cup white wine (or vegetable broth)
- 2 tbsp fresh lemon juice
- 1/2 tsp red pepper flakes
- 1/4 cup fresh parsley, chopped
Instructions
- Thaw and pat dry the shrimp if using frozen.
- Melt the butter in a large skillet over medium heat and sauté the minced garlic until fragrant, about 30 seconds.
- Add the shrimp and sprinkle with red pepper flakes, seasoning with salt and pepper. Cook until shrimp turns pink, about 3-4 minutes.
- Pour in white wine and simmer for a couple of minutes. Add fresh lemon juice and stir.
- Gently toss in chopped parsley and serve immediately.
Notes
Use fresh shrimp for the best flavor. Adjust red pepper flakes to your spice preference.
