- 4 cups fresh corn, or frozen/canned corn
- 4 tablespoons unsalted butter
- 4 oz cream cheese
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions
Instructions
- If using fresh corn, carefully cut the kernels off the cob. If using frozen or canned corn, rinse and drain.
- In a large skillet over medium heat, melt the butter until sizzling.
- Add the corn and sauté, stirring occasionally for about 5 minutes until slightly caramelized.
- Stir in the cream cheese, letting it melt into the corn to create a creamy sauce.
- Sprinkle in the garlic powder, chili powder, and Parmesan cheese. Stir until combined and let simmer for a few more minutes.
- Fold in the chopped green onions right before serving.
Notes
Use fresh corn for the best flavor and don’t rush the browning of the corn for added sweetness.
