Description

A rich and flavorful side dish that perfectly balances sweet corn with a buttery sauce, perfect for any gathering.


Ingredients

  • 4 cups fresh corn, or frozen/canned corn
  • 4 tablespoons unsalted butter
  • 4 oz cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions


Instructions

  1. If using fresh corn, carefully cut the kernels off the cob. If using frozen or canned corn, rinse and drain.
  2. In a large skillet over medium heat, melt the butter until sizzling.
  3. Add the corn and sauté, stirring occasionally for about 5 minutes until slightly caramelized.
  4. Stir in the cream cheese, letting it melt into the corn to create a creamy sauce.
  5. Sprinkle in the garlic powder, chili powder, and Parmesan cheese. Stir until combined and let simmer for a few more minutes.
  6. Fold in the chopped green onions right before serving.

Notes

Use fresh corn for the best flavor and don’t rush the browning of the corn for added sweetness.
