Description

A refreshing and creamy pasta salad perfect for summer picnics and barbecues.


Ingredients

Scale
  • 2 cups pasta (rotini or penne)
  • 1 cup cottage cheese
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh herbs (basil, parsley, dill, or chives)


Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cools, dice the bell peppers, halve the cherry tomatoes, and dice the cucumber.
  3. In a large bowl, mix the cooled pasta and diced veggies together evenly.
  4. Gently fold in the cottage cheese until well mixed.
  5. Drizzle with olive oil and lemon juice, then season with salt and pepper and add fresh herbs.
  6. Chill the salad in the fridge for about 30 minutes before serving.
