A refreshing and creamy pasta salad perfect for summer picnics and barbecues.
Ingredients

- 2 cups pasta (rotini or penne)
- 1 cup cottage cheese
- 1 cup bell peppers, diced (mixed colors)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh herbs (basil, parsley, dill, or chives)
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water.
- While the pasta cools, dice the bell peppers, halve the cherry tomatoes, and dice the cucumber.
- In a large bowl, mix the cooled pasta and diced veggies together evenly.
- Gently fold in the cottage cheese until well mixed.
- Drizzle with olive oil and lemon juice, then season with salt and pepper and add fresh herbs.
- Chill the salad in the fridge for about 30 minutes before serving.
Notes
Feel free to get creative with add-ins like olives, spinach, or bacon bits for extra flavor.
