Deliciously soft and chewy blondies packed with cranberries and topped with creamy frosting for a perfect balance of sweetness and tartness.
Ingredients
Scale
- ½ cup butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ¾ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup dried cranberries
- ½ cup white chocolate chips
- 4 oz. cream cheese
- 1 cup powdered sugar
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
- Add the egg and vanilla extract to the mixture and mix until fully combined.
- In a separate bowl, whisk the flour, baking powder, and salt together, then gradually add to the wet ingredients, mixing just until combined.
- Gently fold in the dried cranberries and white chocolate chips until evenly distributed.
- Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the bars cool, beat together cream cheese, powdered sugar, and lemon juice until smooth and creamy.
- Once the bars are completely cooled, spread the frosting over the top.
- Slice into bars and serve.
Notes
Ensure the butter is softened for the best texture. For a lighter frosting, consider using Greek yogurt.
