Description

A wholesome and satisfying chicken stew featuring tender chicken thighs, flavorful vegetables, and aromatic herbs, perfect for cozy evenings.

Ingredients

Scale
  • 4 chicken thighs
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 2 stalks of celery, chopped
  • 4 cups chicken broth
  • 1 tsp fresh thyme (or dried)
  • 1 tsp fresh rosemary (or more thyme if short)
  • 3 cloves garlic, minced

Instructions

  1. Prep your ingredients: Chop your carrots, potatoes, and celery into bite-sized pieces.
  2. Layer your ingredients: Place the chicken thighs at the bottom of the crockpot, then layer the vegetables on top.
  3. Add the broth: Pour the chicken broth over everything, ensuring the veggies are submerged.
  4. Season it: Sprinkle in your spices and give it a gentle stir.
  5. Set and forget: Cover and cook on low for 6-8 hours or high for 4-5 hours.
  6. Shred and serve: Just before serving, shred the chicken right in the pot.

Notes

Pair with crusty bread or buttery biscuits, and consider fresh parsley or a squeeze of lemon for brightness.
