Description

Soft, chewy cookies that capture the warm, cinnamon flavor of your favorite coffee cake.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg (or 1/4 cup unsweetened applesauce for vegan)
  • 2 cups all-purpose flour (or oat flour for gluten-free)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the flour mixture to the wet ingredients until just combined.
  6. If using nuts, gently fold them into the dough.
  7. Scoop dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Allow to cool slightly before transferring to a wire rack.

Notes

For a crumblier topping, sprinkle a cinnamon-sugar mix on top before baking. Consider drizzling with a sweet glaze once cooled.
