Description

A delightful dessert that merges the bold flavor of coffee with the subtle nuttiness of walnuts, often enjoyed during tea time or as a sweet end to dinner.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup unsalted butter
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup freshly brewed coffee
  • 1 cup chopped walnuts
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a bowl, whisk together the flour and baking powder. Set aside.
  3. In a separate bowl, beat the butter and sugar until fluffy.
  4. Mix in the eggs one at a time and then stir in the brewed coffee.
  5. Gradually add the flour mixture to the butter mixture and gently fold in the chopped walnuts.
  6. Divide the batter equally into the prepared pans and bake for about 25-30 minutes.
  7. Allow the cakes to cool, then layer them with a coffee-flavored frosting made from powdered sugar, butter, more coffee, and vanilla.
  8. Top with extra chopped walnuts for a lovely finish!

Notes

For a vegan version, replace eggs with flax eggs and use margarine instead of butter.
