- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup unsalted butter
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 cup freshly brewed coffee
- 1 cup chopped walnuts
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- In a bowl, whisk together the flour and baking powder. Set aside.
- In a separate bowl, beat the butter and sugar until fluffy.
- Mix in the eggs one at a time and then stir in the brewed coffee.
- Gradually add the flour mixture to the butter mixture and gently fold in the chopped walnuts.
- Divide the batter equally into the prepared pans and bake for about 25-30 minutes.
- Allow the cakes to cool, then layer them with a coffee-flavored frosting made from powdered sugar, butter, more coffee, and vanilla.
- Top with extra chopped walnuts for a lovely finish!
Notes
For a vegan version, replace eggs with flax eggs and use margarine instead of butter.
