Description

A delightful treat that combines the rich taste of coconut with a tender, fluffy cake, perfect for snacking or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter (softened)
  • 1 cup coconut milk
  • 1 cup grated coconut (sweetened or unsweetened)
  • 3 large eggs
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with butter or cooking spray and line it with parchment paper.
  3. In a bowl, whisk together the flour, baking powder, and sugar until combined.
  4. In another bowl, cream the softened butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, then add the coconut milk and mix until combined.
  6. Gradually add the flour mixture into the wet ingredients and mix gently. Stir in grated coconut.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For serving, dust with powdered sugar or drizzle with coconut glaze. Store leftovers in an airtight container for up to three days.
