Description

A warm and comforting bowl of Classic Hot and Sour Soup filled with mushrooms, tofu, and bold flavors.


Ingredients

  • 8 oz Shiitake or wood ear mushrooms, sliced
  • 14 oz Silken or firm tofu, cubed
  • 1 cup Bamboo shoots, sliced
  • 2 tbsp Chili paste (adjust to taste)
  • 3 tbsp Rice vinegar
  • 3 tbsp Soy sauce
  • 4 cups Vegetable stock
  • 2 Eggs, whisked (optional)
  • 2 Green onions, chopped (for garnish)


Instructions

  1. Prepare your ingredients: slice the mushrooms and bamboo shoots, and cube the firm tofu.
  2. In a pot, heat a splash of oil over medium heat. Toss in the mushrooms and bamboo shoots, cooking until softened.
  3. Pour in the vegetable stock and bring to a gentle simmer. Let it bubble for about 5 minutes to infuse flavors.
  4. Gently add in the tofu cubes, taking care with silken tofu to prevent breaking.
  5. Stir in chili paste and soy sauce, adjusting for desired spiciness.
  6. Pour in the vinegar and let simmer for an additional 2 minutes.
  7. If using, drizzle in the whisked eggs, stirring gently to create ribbons.
  8. Remove from heat and garnish with chopped green onions.

Notes

Taste as you go to adjust vinegar and chili paste to your preference. Use fresh ingredients for the best flavor.
