- 8 oz Shiitake or wood ear mushrooms, sliced
- 14 oz Silken or firm tofu, cubed
- 1 cup Bamboo shoots, sliced
- 2 tbsp Chili paste (adjust to taste)
- 3 tbsp Rice vinegar
- 3 tbsp Soy sauce
- 4 cups Vegetable stock
- 2 Eggs, whisked (optional)
- 2 Green onions, chopped (for garnish)
Instructions
- Prepare your ingredients: slice the mushrooms and bamboo shoots, and cube the firm tofu.
- In a pot, heat a splash of oil over medium heat. Toss in the mushrooms and bamboo shoots, cooking until softened.
- Pour in the vegetable stock and bring to a gentle simmer. Let it bubble for about 5 minutes to infuse flavors.
- Gently add in the tofu cubes, taking care with silken tofu to prevent breaking.
- Stir in chili paste and soy sauce, adjusting for desired spiciness.
- Pour in the vinegar and let simmer for an additional 2 minutes.
- If using, drizzle in the whisked eggs, stirring gently to create ribbons.
- Remove from heat and garnish with chopped green onions.
Notes
Taste as you go to adjust vinegar and chili paste to your preference. Use fresh ingredients for the best flavor.
