A cozy and creamy pasta dish combining the classic flavors of chicken pot pie for a comforting meal.
Ingredients
- Rotini or penne pasta
- Cooked and shredded chicken breast
- Mixed vegetables (peas, carrots, corn)
- Cream of chicken soup
- Low-sodium chicken broth
- Chopped onion
- Minced garlic
- Salt
- Pepper
- Thyme
- Parsley
Instructions
- Boil salted water in a large pot. Add pasta and cook until al dente. Drain and set aside.
- In the same pot, add olive oil and sauté chopped onions and minced garlic until fragrant, about 2-3 minutes.
- Add shredded chicken and mixed vegetables, stirring for a couple of minutes.
- Pour in cream of chicken soup and chicken broth, stirring until well combined. Simmer for about 5 minutes to thicken.
- Add cooked pasta to the sauce, stirring gently to coat. Season with salt, pepper, thyme, and parsley. Cook for another minute.
- Ladle into bowls and serve, garnished with cheese or fresh herbs if desired.
Notes
To make it richer, consider adding a splash of heavy cream at the end. Leftovers keep well for about 3 days in an airtight container.
