Description

A cozy and creamy pasta dish combining the classic flavors of chicken pot pie for a comforting meal.


Ingredients

  • Rotini or penne pasta
  • Cooked and shredded chicken breast
  • Mixed vegetables (peas, carrots, corn)
  • Cream of chicken soup
  • Low-sodium chicken broth
  • Chopped onion
  • Minced garlic
  • Salt
  • Pepper
  • Thyme
  • Parsley


Instructions

  1. Boil salted water in a large pot. Add pasta and cook until al dente. Drain and set aside.
  2. In the same pot, add olive oil and sauté chopped onions and minced garlic until fragrant, about 2-3 minutes.
  3. Add shredded chicken and mixed vegetables, stirring for a couple of minutes.
  4. Pour in cream of chicken soup and chicken broth, stirring until well combined. Simmer for about 5 minutes to thicken.
  5. Add cooked pasta to the sauce, stirring gently to coat. Season with salt, pepper, thyme, and parsley. Cook for another minute.
  6. Ladle into bowls and serve, garnished with cheese or fresh herbs if desired.

Notes

To make it richer, consider adding a splash of heavy cream at the end. Leftovers keep well for about 3 days in an airtight container.
