A nostalgic classic cherry pie featuring a flaky crust and a sweet-tart cherry filling, perfect for any dessert table.

- 4 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice, freshly squeezed
- ¼ teaspoon cinnamon (optional)
- 2 tablespoons butter, dotted on top
- 2 pie crusts, homemade or store-bought
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the cherries by pitting and slicing fresh ones, or thawing and draining frozen ones.
- In a bowl, mix cherries, sugar, cornstarch, lemon juice, and cinnamon until combined.
- Roll out half of the dough to fit a 9-inch pie pan, fill it with the cherry mixture, and dot with butter.
- Cover with the second half of the dough, seal the edges, and cut slits in the top for steam to escape.
- Bake for 45-50 minutes until the crust is golden and the filling is bubbly.
- Let cool for about an hour before slicing.

Serve warm or at room temperature, preferably with vanilla ice cream or freshly whipped cream.
