Description

Fluffy and warm cupcakes that blend the rich flavors of cinnamon rolls with a dreamy cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup buttermilk
  • 4 oz cream cheese
  • 2 cups powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually mix in the dry ingredients and buttermilk, starting and ending with dry ingredients. Do not overmix.
  6. Fill each cupcake liner about two-thirds full with batter.
  7. Mix together butter, sugar, and cinnamon to create a cinnamon sugar mixture. Drizzle onto the cupcake batter and swirl with a toothpick.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
  10. Whip together cream cheese and powdered sugar until smooth for frosting.
  11. Frost the cooled cupcakes and sprinkle extra cinnamon on top if desired.

Notes

Use room temperature ingredients for a smoother batter. Avoid overmixing to keep the cupcakes fluffy.
