Description

Delightful cinnamon roll cookies that combine the soft texture of cookies with the classic flavor of cinnamon rolls.


Ingredients

  • 2 ¾ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp milk (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract until smooth and combined.
  4. In a separate bowl, whisk together flour, baking soda, and cinnamon; gradually mix into the wet mixture.
  5. Drop dough balls onto a baking sheet lined with parchment paper, leaving space between each cookie.
  6. Bake for 10-12 minutes until edges are lightly golden.
  7. While cookies are baking, whisk together powdered sugar and a splash of milk until smooth for the glaze.
  8. Once cookies are cool, drizzle the glaze over the top and let it set for a few minutes.

Notes

Chill the dough for at least 30 minutes for thicker cookies. Customize the glaze with a pinch of salt or extra vanilla.
