Description

Delightful cookies inspired by classic cinnamon rolls, with a buttery filling and a sweet glaze.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 2 tablespoons unsalted butter, softened (for filling)
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar, packed (for filling)
  • 1 cup powdered sugar (for glaze)
  • 2-3 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar for 2-3 minutes until fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. In a small bowl, mix together softened butter, cinnamon, and brown sugar for the filling.
  7. Take tablespoons of cookie dough, flatten slightly, add a spoonful of cinnamon filling in the center, and encase it.
  8. Roll into a ball and place on the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes until lightly golden around the edges.
  10. Let cool for 5 minutes, then whisk together glaze ingredients and drizzle over warm cookies.

Notes
