Description

A comforting and delicious cinnamon raisin bread pudding soaked in a creamy custard, perfect for brunch or dessert.

Ingredients

Scale
  • 8 cups cinnamon raisin bread, cubed
  • 2 cups whole milk (or almond/oat milk)
  • 4 large eggs (or flax eggs for vegan option)
  • 1 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the cinnamon raisin bread into bite-sized cubes.
  3. In a large bowl, whisk together the eggs, milk, brown sugar, cinnamon, and vanilla until combined.
  4. Gently fold in the bread cubes and raisins into the custard mixture. Let it sit for about 15-20 minutes.
  5. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Bake for 45-50 minutes until the top is golden brown and the center is set.
  7. Let it cool for a few minutes before serving, optionally with whipped cream or ice cream.

Notes

Choose stale bread for best results. You can add spices like nutmeg or allspice for extra flavor.
