Description

Soft, chewy cookies bursting with the warm flavors of cinnamon and coffee, rolled in powdered sugar for a crackled finish.


Ingredients

  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 2 tsp Cinnamon
  • 2 tbsp Instant Coffee Granules
  • 1/2 tsp Salt
  • 1/2 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/4 cup Powdered Sugar, for rolling


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, cinnamon, coffee granules, and salt.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well, and then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Chill the dough in the fridge for at least 30 minutes.
  7. Scoop out the dough and roll it into balls, then roll in powdered sugar.
  8. Place them on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  9. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
