- 2 cups All-Purpose Flour
- 2 tsp Baking Powder
- 2 tsp Cinnamon
- 2 tbsp Instant Coffee Granules
- 1/2 tsp Salt
- 1/2 cup Unsalted Butter, softened
- 1 cup Granulated Sugar
- 2 Eggs
- 1 tsp Vanilla Extract
- 1/4 cup Powdered Sugar, for rolling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, cinnamon, coffee granules, and salt.
- In another bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well, and then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Chill the dough in the fridge for at least 30 minutes.
- Scoop out the dough and roll it into balls, then roll in powdered sugar.
- Place them on a baking sheet lined with parchment paper and bake for 10-12 minutes.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
