Ingredients

- 2 cups Fresh Cranberries
- 2 cups All-Purpose Flour
- 1 cup Granulated Sugar
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 2 Eggs
- 1/2 cup Butter, melted
- 1 tsp Vanilla Extract
- 1 tbsp Orange Zest
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan with butter or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs, then add melted butter, vanilla extract, and orange zest. Mix well.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Fold in the cranberries.
- Transfer the batter to the loaf pan and bake for 60-70 minutes, until a toothpick comes out clean.
- Let it cool in the pan for 15 minutes before transferring to a wire rack.
- Slice, serve, and enjoy!
Notes
For a vegan version, substitute eggs with flax eggs and use plant-based butter or oil. Can be served with powdered sugar, whipped cream, or cream cheese.
