Description

A moist and sweet bread packed with tart cranberries, perfect for the holiday season.


Ingredients

Scale
  • 2 cups Fresh Cranberries
  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 Eggs
  • 1/2 cup Butter, melted
  • 1 tsp Vanilla Extract
  • 1 tbsp Orange Zest


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with butter or line it with parchment paper.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, beat the eggs, then add melted butter, vanilla extract, and orange zest. Mix well.
  5. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  6. Fold in the cranberries.
  7. Transfer the batter to the loaf pan and bake for 60-70 minutes, until a toothpick comes out clean.
  8. Let it cool in the pan for 15 minutes before transferring to a wire rack.
  9. Slice, serve, and enjoy!

Notes

For a vegan version, substitute eggs with flax eggs and use plant-based butter or oil. Can be served with powdered sugar, whipped cream, or cream cheese.
