- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup cocoa powder (unsweetened)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup jam (raspberry, apricot, or your favorite)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Sift in the all-purpose flour, cocoa powder, baking powder, and salt. Mix until combined.
- Add the vanilla extract and mix gently.
- Scoop out about a tablespoon of dough, roll it into a ball, and create a small indentation in the center using your thumb.
- Place the cookies on a baking tray lined with parchment paper and leave some space between them.
- Bake for 12-15 minutes, until the edges firm up and the centers slightly puff.
- Let them sit on the baking tray for a few minutes, then transfer to a wire rack to cool.
- Fill the thumbprint with your choice of jam or filling.
Notes
Butter can be substituted with margarine. Whole wheat flour can be used for a healthier option. Try nut butter or chocolate ganache for variations.
