Description

Soft, rich chocolate cookies with a decadent dollop of jam at the center, perfect for any gathering.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder (unsweetened)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup jam (raspberry, apricot, or your favorite)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Sift in the all-purpose flour, cocoa powder, baking powder, and salt. Mix until combined.
  4. Add the vanilla extract and mix gently.
  5. Scoop out about a tablespoon of dough, roll it into a ball, and create a small indentation in the center using your thumb.
  6. Place the cookies on a baking tray lined with parchment paper and leave some space between them.
  7. Bake for 12-15 minutes, until the edges firm up and the centers slightly puff.
  8. Let them sit on the baking tray for a few minutes, then transfer to a wire rack to cool.
  9. Fill the thumbprint with your choice of jam or filling.

Notes

Butter can be substituted with margarine. Whole wheat flour can be used for a healthier option. Try nut butter or chocolate ganache for variations.
