- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup milk (or almond milk)
- 2 large eggs (or flax eggs)
- 1/4 cup melted butter (or coconut oil)
- 1/2 cup creamy peanut butter
- 1/2 cup chocolate chips
- 1/4 cup powdered sugar
Instructions
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, eggs, and melted butter.
- Gradually add the wet ingredients to the dry ingredients and stir until a soft dough forms.
- Dust your countertop with flour and roll the dough to about ½ inch thick.
- Use a donut cutter or two round cutters to shape your donuts.
- In a deep pan, heat oil to about 350°F (175°C) over medium heat.
- Carefully drop the donuts into the hot oil, frying until they are golden brown on each side, about 2-3 minutes.
- While the donuts are cooling, melt the chocolate chips and mix them with peanut butter until smooth and creamy.
- Add powdered sugar for sweetness.
- Using a pastry bag or small spoon, inject the peanut butter and chocolate filling into each donut.
Notes
These donuts are best enjoyed fresh, and can be dusted with powdered sugar or drizzled with melted chocolate.
