Description

A rich and indulgent chocolate mousse cake that combines fluffy mousse with a dense chocolate cake, perfect for any occasion.


Ingredients

Scale
  • 8 oz (225g) dark chocolate, chopped
  • 1/2 cup (113g) unsalted butter
  • 4 large eggs
  • 1 cup (200g) granulated sugar
  • 1 cup (125g) all-purpose flour
  • 1/3 cup (30g) cocoa powder
  • 1 cup (240ml) heavy cream
  • 1 tsp vanilla extract


Instructions

  1. Grease a cake pan and line the bottom with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water and let cool slightly.
  3. In a mixing bowl, beat the eggs and sugar until thick and pale (about 3-5 minutes).
  4. Gently fold the melted chocolate into the egg mixture.
  5. Sift together the flour and cocoa powder, then fold into the chocolate mixture until just combined.
  6. Pour the batter into the prepared pan and bake at 350°F (175°C) for about 25 minutes or until a toothpick comes out clean.
  7. While the cake cools, whip the heavy cream until soft peaks form, then fold in more melted dark chocolate.
  8. Once the cake is completely cooled, slice horizontally and spread half of the mousse on the bottom layer. Replace the top layer and top with remaining mousse.
  9. Chill in the fridge for at least an hour before serving.
