Description
A rich and indulgent chocolate mousse cake that combines fluffy mousse with a dense chocolate cake, perfect for any occasion.

- 8 oz (225g) dark chocolate, chopped
- 1/2 cup (113g) unsalted butter
- 4 large eggs
- 1 cup (200g) granulated sugar
- 1 cup (125g) all-purpose flour
- 1/3 cup (30g) cocoa powder
- 1 cup (240ml) heavy cream
- 1 tsp vanilla extract
Instructions
- Grease a cake pan and line the bottom with parchment paper.
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water and let cool slightly.
- In a mixing bowl, beat the eggs and sugar until thick and pale (about 3-5 minutes).
- Gently fold the melted chocolate into the egg mixture.
- Sift together the flour and cocoa powder, then fold into the chocolate mixture until just combined.
- Pour the batter into the prepared pan and bake at 350°F (175°C) for about 25 minutes or until a toothpick comes out clean.
- While the cake cools, whip the heavy cream until soft peaks form, then fold in more melted dark chocolate.
- Once the cake is completely cooled, slice horizontally and spread half of the mousse on the bottom layer. Replace the top layer and top with remaining mousse.
- Chill in the fridge for at least an hour before serving.
