Description
A light yet indulgent chocolate mousse cake with a fudgy base and creamy mousse layer.

- 8 oz dark chocolate (70% cocoa)
- 1/2 cup unsalted butter
- 4 eggs
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1 cup heavy cream
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a round cake pan.
- Melt the dark chocolate and butter together in a heatproof bowl, stirring until smooth. Let cool slightly.
- Whisk the eggs and granulated sugar in another bowl until pale and creamy (about 5 minutes).
- Gently fold the cooled chocolate mixture into the egg mixture until just combined.
- Sift the flour into the batter and fold it in gently until no dry bits remain.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let it cool completely.
- While the cake cools, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Fold the whipped cream into the melted chocolate until combined.
- Once the cake has cooled, spread the chocolate mousse over the top and chill if desired.
- Slice and enjoy!
Notes
Cool the melted chocolate before adding to the eggs to prevent scrambling. Be gentle when folding in the whipped cream to maintain an airy texture.
