Description

A light yet indulgent chocolate mousse cake with a fudgy base and creamy mousse layer.


Ingredients

Scale
  • 8 oz dark chocolate (70% cocoa)
  • 1/2 cup unsalted butter
  • 4 eggs
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Melt the dark chocolate and butter together in a heatproof bowl, stirring until smooth. Let cool slightly.
  3. Whisk the eggs and granulated sugar in another bowl until pale and creamy (about 5 minutes).
  4. Gently fold the cooled chocolate mixture into the egg mixture until just combined.
  5. Sift the flour into the batter and fold it in gently until no dry bits remain.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let it cool completely.
  7. While the cake cools, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  8. Fold the whipped cream into the melted chocolate until combined.
  9. Once the cake has cooled, spread the chocolate mousse over the top and chill if desired.
  10. Slice and enjoy!

Notes

Cool the melted chocolate before adding to the eggs to prevent scrambling. Be gentle when folding in the whipped cream to maintain an airy texture.
