Description

Ingredients

  • 3 ripe bananas, mashed
  • 1.5 cups all-purpose flour (or whole wheat flour)
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar (or brown sugar)
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 tablespoon espresso powder (or instant coffee granules)
  • 2 large eggs
  • 1/3 cup vegetable oil (or applesauce)
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mash the ripe bananas and mix in the eggs, sugar, vegetable oil, and vanilla extract until combined.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just blended.
  5. Fold in the chocolate chips.
  6. Grease a 9×5-inch loaf pan or line it with parchment paper.
  7. Pour the batter into the pan and bake for about 60 minutes, or until a toothpick comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack.
  9. Slice and enjoy!

Notes

Use very ripe bananas for maximum sweetness and moisture. Letting the bread sit for a day will deepen its flavors.
