- 3 ripe bananas, mashed
- 1.5 cups all-purpose flour (or whole wheat flour)
- 1/2 cup unsweetened cocoa powder
- 3/4 cup granulated sugar (or brown sugar)
- 1 teaspoon baking soda
- A pinch of salt
- 1 tablespoon espresso powder (or instant coffee granules)
- 2 large eggs
- 1/3 cup vegetable oil (or applesauce)
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.
- In another bowl, mash the ripe bananas and mix in the eggs, sugar, vegetable oil, and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients and stir until just blended.
- Fold in the chocolate chips.
- Grease a 9×5-inch loaf pan or line it with parchment paper.
- Pour the batter into the pan and bake for about 60 minutes, or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack.
- Slice and enjoy!
Notes
Use very ripe bananas for maximum sweetness and moisture. Letting the bread sit for a day will deepen its flavors.
