- 2-3 ripe bananas
- 1 cup all-purpose flour (or whole wheat flour)
- 1 cup granulated sugar (or brown sugar)
- 1/3 cup unsweetened cocoa powder
- 2 tablespoons espresso powder (or instant coffee)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- A pinch of salt
- 2 large eggs (or flax eggs for vegan option)
- 1/2 cup unsalted butter (melted, or coconut oil)
- 1 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the ripe bananas with a fork until smooth.
- Add the melted butter, sugar, eggs, and espresso powder to the bananas, stirring until well combined.
- In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- Gradually fold the dry mixture into the wet ingredients.
- Gently stir in the chocolate chips.
- Grease a loaf pan and pour the batter in, smoothing the top.
- Bake for about 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a rack to cool completely.
Notes
For added texture, consider adding nuts like walnuts or pecans. Store leftovers tightly wrapped for up to 3 days, or freeze for later.
