Description

A scrumptiously moist and flavorful banana bread with rich espresso, chocolate chips, and ripe bananas.


Ingredients

  • 2-3 ripe bananas
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 cup granulated sugar (or brown sugar)
  • 1/3 cup unsweetened cocoa powder
  • 2 tablespoons espresso powder (or instant coffee)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • 2 large eggs (or flax eggs for vegan option)
  • 1/2 cup unsalted butter (melted, or coconut oil)
  • 1 cup chocolate chips (semi-sweet or dark)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe bananas with a fork until smooth.
  3. Add the melted butter, sugar, eggs, and espresso powder to the bananas, stirring until well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually fold the dry mixture into the wet ingredients.
  6. Gently stir in the chocolate chips.
  7. Grease a loaf pan and pour the batter in, smoothing the top.
  8. Bake for about 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a rack to cool completely.

Notes

For added texture, consider adding nuts like walnuts or pecans. Store leftovers tightly wrapped for up to 3 days, or freeze for later.
