Description

Delicious little treats that combine sweet chocolate and rich coffee flavors in soft, fluffy muffins, perfect for breakfast or snacks.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk (or almond milk)
  • 2 large eggs (or flax eggs)
  • 1 tsp vanilla extract
  • 2 tbsp instant coffee
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by lining it with paper liners or greasing it lightly.
  3. In a large bowl, mix together flour, sugar, baking powder, and salt until no lumps remain.
  4. In another bowl, whisk together milk, eggs, vanilla extract, and instant coffee until combined and frothy.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.
  6. Fold in chocolate chips, reserving a few for topping if desired.
  7. Scoop batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Don’t overmix the batter and use room temperature ingredients for best results.
