Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk (or almond milk)
- 2 large eggs (or flax eggs)
- 1 tsp vanilla extract
- 2 tbsp instant coffee
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your muffin tin by lining it with paper liners or greasing it lightly.
- In a large bowl, mix together flour, sugar, baking powder, and salt until no lumps remain.
- In another bowl, whisk together milk, eggs, vanilla extract, and instant coffee until combined and frothy.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix.
- Fold in chocolate chips, reserving a few for topping if desired.
- Scoop batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
Notes
Don’t overmix the batter and use room temperature ingredients for best results.
