Description

Delicious bite-sized treats combining chocolate cookies with a creamy cheesecake center.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter and sugars together until light and fluffy. Mix in the egg and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. In a separate bowl, beat the cream cheese until smooth, then gently mix in the powdered sugar and vanilla.
  6. Take a small section of cookie dough, flatten it, and place a scoop of cheesecake filling in the middle. Wrap the dough around it and roll into a ball.
  7. Place on the baking sheet and bake for about 10-12 minutes until the edges are set.
  8. Let cool on the sheet before transferring to a wire rack.

Notes

For better shape, chill cookie dough for 30 minutes before baking. Can substitute with gluten-free flour for a gluten-free option.
