- 1 lb boneless, skinless chicken breast
- 4 flour tortillas
- 1/2 cup chipotle ranch dressing
- 2 cups chopped lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or pepper jack)
- 1/2 cup chopped onions (red or green)
Instructions
- Marinate the chicken with spices and let it sit for at least 30 minutes.
- Preheat grill or skillet on medium-high heat and cook chicken for 6-7 minutes on each side until it reaches 165°F. Let it rest before slicing.
- Chop lettuce, tomatoes, and onions while the chicken is cooking.
- Lay a tortilla flat and layer in the chicken, veggies, and drizzle with chipotle ranch dressing.
- Fold the sides and roll from the bottom up, tucking the sides in as you go.
- For extra crispiness, grill the burrito seam-down for 2-3 minutes.
