Description

A flavorful burrito filled with grilled chicken, fresh veggies, and zesty chipotle ranch dressing.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 4 flour tortillas
  • 1/2 cup chipotle ranch dressing
  • 2 cups chopped lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1/2 cup chopped onions (red or green)


Instructions

  1. Marinate the chicken with spices and let it sit for at least 30 minutes.
  2. Preheat grill or skillet on medium-high heat and cook chicken for 6-7 minutes on each side until it reaches 165°F. Let it rest before slicing.
  3. Chop lettuce, tomatoes, and onions while the chicken is cooking.
  4. Lay a tortilla flat and layer in the chicken, veggies, and drizzle with chipotle ranch dressing.
  5. Fold the sides and roll from the bottom up, tucking the sides in as you go.
  6. For extra crispiness, grill the burrito seam-down for 2-3 minutes.
