- 1 can chickpeas, rinsed and drained
- 1 ripe avocado, diced
- 1 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley or cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse and drain the chickpeas.
- Chop the cucumbers, tomatoes, and red onion into bite-sized pieces.
- In a large bowl, combine the chickpeas, cucumbers, cherry tomatoes, red onion, and herbs. Toss gently to blend.
- Add the diced avocado and crumbled feta cheese, mixing carefully to avoid mashing the avocado.
- Drizzle with olive oil and lemon juice, then toss to combine. Adjust seasoning with salt and pepper as needed.
- Serve immediately or chill in the fridge before serving.
