- 2-3 cups Chicken Breasts, diced
- 2 medium Zucchini, sliced
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- 1 teaspoon Italian Seasoning
- Salt and Pepper, to taste
- 1 cup Shredded Cheese (mozzarella or cheddar)
Instructions
- Preheat your oven to 375°F (190°C).
- Dice the chicken and slice the zucchini.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken, garlic, and Italian seasoning. Cook until the chicken is golden brown, about 7-10 minutes.
- Toss in the sliced zucchini and cook for about 5 minutes until it starts to soften.
- Transfer the mixture to a baking dish, season with salt and pepper, then sprinkle cheese on top.
- Bake for 25-30 minutes until the cheese is melted and bubbly and the chicken is cooked through.
- Let cool slightly before serving.
Notes
Don’t overcook the zucchini to keep it tender but not mushy. Feel free to experiment with different cheeses and add more veggies for extra nutrition.
